It's quite fitting as the first ever recorded "named" Pavlova was in 1911 called the "Strawberries Pavlova". Pavlova if you are not aware is a meringue based dessert that's crispy on the outside and soft and chewy in the middle. As opposed to the traditionally crispy crunchy meringue.
Why? We think its because Pavlova is a romantic and sweet dessert and strawberries match it perfectly with their red heart shaped sweetness. Also you may not have realised but strawberries are from the rose family and they are the symbol of Venus, the Roman goddess of love. This makes them a perfect match for the historically sweet dessert named after one of the worlds best ballerina's Anna Pavlova.
Strawberry Pavlova Cake Recipe by Donal Skehan
250g icing sugar
4 egg whites
2 tsps of cornflour
1 tsps of white wine vinegar
500ml of cream, whipped
250g of mixed berries
- Preheat the oven to 150°C/300°F/Gas Mark Line two baking trays with baking parchment. Draw a large circle 25cm/10inch on each piece of parchment paper.
- Place the icing sugar and egg whites in a standing food mixer and whisk on high for 10 minutes until glossy white peaks form. Using a spatula, gently fold in the cornflour and the white wine vinegar.
- Divide the meringue mixture between the two baking trays and using a tablespoon, form two large meringue discs. Bake for 45 minutes, remove from the oven and allow to cool completely.

PAVLOVA MERINGUE INGREDIENTS
8 egg whites (make sure there is no shell or yolks at all in your whites)
2 1/2 cups caster sugar (also called superfine sugar)
2 tsp vinegar
600 mls cream (35% fat)
2 Tbsp icing sugar (powdered sugar)
1 tsp vanilla
250g (8.82 ounces) (or 1 2/3 cups) blueberries
250g (8.82 ounces)(or 1 2/3 cups) strawberries
1 banana and fresh lemon juice
Place all your ingredients into a bowl and whip on high speed of an electric mixer until it holds it shape when you lift up the beaters (turn them off before lifting up if you do not want your kitchen coated in splatters of sweet meringue.)
Using pencil draw three 19cm (7.48 inches) circles onto non-stick baking paper, turn the paper over so that the pencil will not touch the meringue.
Scoop the meringue evenly between the three circles and using the back of a spoon spread it out and shape it into a disc.
Bake in a slow oven 120C (248 degrees Fahrenheit) for 1 hour.
Turn the oven off and leave to cool in the oven, taking it out will cause large cracks.
