Ingredients:

2 cups desiccated coconut
1 tsp vanilla extract
3 tbs maple syrup
3 tbs coconut oil (melted)
1/4 cup coconut cream
1 block of dark chocolate

Method:

  1. Add coconut, coconut cream, maple syrup and vanilla extract to your food processor and mix for 30 seconds.
  2. Then add  coconut oil into the mixture and mix for a further 15 seconds. Roll into balls and freeze.
  3. Freeze for at least 1 hour or until the mixture is set. Then melt the chocolate in a double boiler. Once the coconut is set, remove from the freezer and put them on a baking rack.
  4. Then dip the coconut balls (can use a big spoon) into the dark chocolate covering it totally and rest it back on the baking rack.
Once they’re all coated, put them on a dish and return them to the freezer for about 15 minutes to set.
